High Seas Crab Cakes

Yields: 20 hor d'oeurves

Marinela Crab Cakes
  • 1 cup BIMBO Bread Crumbs
  • 1 egg
  • 1/4 cup mayonnaise
  • 14 ounces frozen lump crabmeat, thawed and drained
  • 1/3 cub shredded Parmesan cheese
  • 2 chopped green onions
  • 5 chopped serrano peppers
  • 1/4 teaspoon ground cayenne pepper
  • Butter to taste

Preheat over to 375 degrees. In a bowl, beat egg and mayonnaise until well blended. Add crabmeat and bread crumbs (to bind); mix well. Gently stir in remaining ingredients. Let stand 5 minutes. Shape into 20 cakes using about 1 tablespoon crabmeat for each cake. Place crab cakes in a single layer on a greased baking sheet. Bake 7 to 10 minutes until cakes are thoroughly cooked and golden brown on both sides. Remove from oven and dot with butter on each cake. Serve hot.
